OONDGEDROOGDE TAMATIES
200-250 g vars kersietamaties, gehalveer
15 ml (1 e) seesout
2,5 ml (½ t) vars gemaalde swartpeper
5 ml (1 t) gemengde droë kruie
30 ml (2 e) witasyn
60 ml (¼ k) olyfolie
VIR BÊRE
125 ml (½ k) olyfolie
vars kruie, soos roosmaryn, tiemie, origanum of ’n paar basilieblare
BROOD
750 g witbroodmeel
’n knippie elk sout en suiker
30 ml (2 e) vars roosmaryn, grofgekap
6 knoffelhuisies, fyngedruk
10 g kitsgis
15 ml (1 e) olyfolie
sowat 450 ml warm water
125 ml (½ k) van die gebakte tamaties, gedreineer en grofgekap
ekstra roosmaryn
VIR VOORSIT
ekstra olyfolie en die orige gebakte tamaties
 
Voorverhit die oond tot 120 °C.
1 OONDGEDROOGDE TAMATIES Plaas die gehalveerde tamaties met die oop kant na bo op die bakplaat. Geur met die sout, peper en gemengde kruie.
2 Drup die asyn en olyfolie oor die tamaties. Oondbraai sowat 30 min. tot die tamaties effens ingekrimp en die rande effens verbruin het. Laat dit afkoel.
3 VIR BÊRE Pak in ’n skoon fles, giet die olyfolie oor en voeg die vars kruie by. Maak toe en bêre in die yskas. (Die tamaties sal tot ses maande hou.)
4 BROOD Sif die meel, sout en suiker saam. Roer die roosmaryn, knoffel en gis by en maak ’n holte in die middel van die mengsel.
5 Meng die olie met die warm water en giet dit in die holte. Meng vinnig om ’n sagte deeg te vorm; voeg nog water by, indien nodig.
6 Knie die deeg sowat 7 min. op ’n meelbestrooide oppervlak tot glad en elasties.
7 Plaas die deeg in ’n liggies gesmeerde bak en bedek met ’n skoon, klam lap. Laat staan 30-45 min. of tot die deeg verdubbel het.
8 Voorverhit die oond tot 200 °C.
9 Knie die deeg weer 3 min., knie die tamaties in en verdeel die deeg. Vorm elke stuk in ’n groot, oval vorm en plaas dit op ’n meelbestrooide bakplaat.
Sny kruisies op elke brood indien verkies en sprinkel die ekstra roosmaryn bo-op. Laat rys sowat 20 min. tot die brode verdubbel het. Bak 30-35 min. of tot die brood hol klink wanneer daarop geklop word.
10 VIR VOORSIT Sit voor saam met die ekstra olyfolie en gebakte tamaties.

Chutney or spreads or pâté
Toasted chunks of French baguette and/or seed crackers
Olive oil and seed confetti (or dukkha)
Biltong and droëwors or a variety of charcuterie
Variety of fruit e.g., strawberries, grapes, and other fruit in season
 
Arrange all the above-mentioned products on a large wooden or glass platter (or bake your own bread – see recipe) and serve with a variety of drinks.

FOR THE LOLLIES

125 ml (½c) full-cream yoghurt
250 g frozen strawberries
80 ml (⅓c) raw honey
 
Place all the ingredients in a blender and blend until smooth. Spoon into 5—6 lollie holders and freeze.
 
FOR THE DRINK

Place a bag of Carmién’s Cranberry Hibiscus Cold Brew in a glass and fill it halfway with ice-cold water and ice. Top with Carmién’s Berry Hibiscus Sparkling Rooibos Iced Tea and add a few blueberries and strawberry slices if preferred. Serve with a lollie dunked into the drink.

APPLE MINT AND GERANIUM DRINK
